For the past six years, Executive Chef Michael Cipollo has been creating culinary magic at one of Toronto’s hottest spots, the Bier Markt, a downtown Toronto Belgian -inspired Brasserie.

Although the Bier Markt may have been previously best known for its exotic beers, in recent years and under Chef Cipollo’s direction, the Bier Markt has become equally well-known for its cuisine and unique seasonal-menus including the annual Fondue, Shellfish, and Wild Game. The Bier Markt’s upscale, European-inspired cuisine combined with its extensive list of beer and wine offerings have established it as one of the city’s most popular dining destinations.

As an active member of the Canadian Culinary Federation and the World Association of Chef Societies, Chef Cipollo is renowned within the food industry for his extensive culinary knowledge, creative approach to European cuisine, as well as his passion for food and ‘bigger-than-life’ personality.

Before joining the Bier Markt, Chef Cipollo spent almost a decade building a reputation as a formidable chef by working at fine dining establishments throughout North America and the Caribbean.
